Wagon Wheels DeliXia®

Ingredients:
150 g manitoba flour
150 g sugar
1 egg
2 yolks
1 teaspoon grated lemon peel
1 teaspoon vanilla extract
2 teaspoons baking powder
150 g butter
300 g corn flour
500 g Milk Caramel DeliXia®
100 g desiccated coconut to decorate




Preheat oven to 180°C.
Mix together the corn flour with the manitoba flour and baking powder in a bowl.
Beat butter and sugar, and add the egg and the yolks one at a time. Mix well.
Add vanilla and lemon peel. Mix to form a stiff, elastic dough.
Roll the dough on a floured surface until it becomes 8 mm thick.
Cut into circles using the rim of a drinking glass or a round cookie cutter and put the circles on a baking sheet.
Bake for about 15 minutes. Let cool.
Spread some Milk Caramel DeliXia® on one cookie and sandwich with another cookie, and repeat with the rest of the cookies.
Spread a bit more DeliXia® on the side and roll over the coconut.
